A Legacy of California Cuisine
Green & Red Vineyard is deeply woven into the history of California’s farm-to-table movement. Founded in 1968 by Jay Heminway in Napa’s rugged Chiles Valley, the winery became part of the culinary revolution led by Alice Waters. Her Berkeley restaurant Chez Panisse, opened in 1971, initially followed French traditions but—according to Smithsonian Magazine—shifted in the early 1980s to a cuisine centered on seasonal, locally sourced ingredients. As the restaurant helped define what we now call California Cuisine, it selected Green & Red as its house Zinfandel for over three decades.
One fascinating detail: Alice Waters was Tobin Heminway’s Montessori teacher—years before founding Chez Panisse. Tobin is Jay's daughter and now winery owner. That early connection and their shared belief in ingredient-driven food make this wine a true piece of California’s culinary history.
Restaurant Calistoga, Kamakura Connection
When Restaurant Calistoga’s owners met Tobin Heminway and her husband Ray (a lawyer, like our founder) in Tokyo, the conversation confirmed what the glass already suggested: this wine reflects not just site, but spirit. The vineyard’s name—Green & Red—comes from the serpentine green and red volcanic soils on their estate, which, combined with high-elevation farming, create vibrant, balanced wines full of character.
As soon as Green & Red arrived in Japan, we featured it at a premium wine pairing event in Kamakura—where it stood out among a lineup of top-tier wines. Guests were surprised, impressed, and many purchased bottles on the spot.
Tasting Notes
Lifted red berry, baking spice, and fresh acidity define the 2022 vintage. Aged for 14 months in 70% American and 30% French oak (20% new), this Zinfandel delivers generous fruit without heaviness, making it an ideal match for grilled meats, savory dishes, and seasonal vegetables. Very likely to please the western and Japanese palate alike.
